Caramel Apple Cupcakes

Last year, Doodle and I decided to make caramel apples.

You know, the real apples on a stick, dipped in oooey, goooey caramel and then dipped in nuts or drizzled with chocolate??

It was a mess.

And he ate just two bites before declaring himself “all done.”

Now that it’s fall, and we’re seeing pictures all over the internet, magazines and in stores…Doodle asked to make them again. And while I want to be the “fun mom” who makes awesome seasonal goodies for her kid, I’m drawing the line one this one. Kind of.

This version of caramel apples isn’t quite as healthy(?), but it’s certainly a little less messy–and just as fun!

Caramel Apple Cupcakes
For the Cupcakes:
  • 1 box (18.25 ounce) spice cake mix
  • 1 cup buttermilk or sour milk
  • ⅓ cup vegetable oil
  • 4 large eggs
  • 1 can apple pie filling
For the Topping:
  • 20 caramels
  • 3 tablespoons milk
  • 1 cup finely chopped pecans
  • 18 lollipop sticks
  • ribbon, optional
  1. Preheat oven to 350. Line muffin tins with paper liners and set aside.
  2. Combine cake mix, buttermilk, oil, and eggs in a large bowl. Mix with an electric mixer until moistened, about 30 seconds. Increase speed to high and beat until thick, about 2 more minutes.
  3. Fill the paper liners two-thirds full and dollop a small spoonful of apple pie filling on top. Bake until golden, about 15 to 20 minutes.
  4. Remove the cupcakes from the baking pans. Place on a wire rack and allow to cool completely.
  5. Meanwhile, cook the caramels and milk in a small saucepan over medium heat until smooth. Spread over cupcakes and sprinkle with pecans. Insert lollipop stick into the center of each cupcake.



And, since we’re entering the baking season, you know what you absolutely cannot be without?  A Silpat.

    We’re headed to the game, too, but with a stop to see our 9-month-old granddaughter, too. It doesn’t get much better than that! Thankfully, we only bleed purple around here, so unless the unthinkable happens, it will be a happy time! I love the caramel apple cupcake idea. So cute!       I haven’t eaten many caramel apples either, for the same reason. After making/eating them with a (then) 4-year old, it will probably be a long time before I do it again! =) These were much easier.

      The buttermilk goes in with the cake mix, oil, and eggs. I’ve corrected it in the printable recipe–thanks so much for spotting that!

    These look amazing! Do leftover cupcakes need to be refridgerated or are they fine left on the counter in an airtight container?

      Hi Gina! I’m kind of weird about my baked goods containing fruit–I usually refrigerate them. But, I also know a lot of people who say it’s just fine to leave something like this at room temp. So I think you’d be fine either way. =)
