Hi Tracy. Yes, Rotel is a brand-name. It’s basically a can of diced tomatoes and diced green chilies…in the States, it comes in different varieties: mild, hot, with lime and cilantro, etc. If you don’t have something similar in Canada, a small jar of chunky salsa would work also!
Hi Tracy, I’m not Ashley, but perhaps I can help?? Ro-tel is indeed a “brand name” here in the states. Basically, it is a can of diced tomatoes and green chilies. Here, it is generally sold in the same section as the other canned tomatoes, however it may also be in an ethnic, or Mexican section in your stores. It usually comes in various “heats” from mild to hot to “Mexican” to “Chili Fixins”. Go to https://www.ro-tel.com/ for a store locator or to get a better idea of what it is. You may have a similar product in Canada that you can substitute. It also makes a great dip! Melt a large Velveeta cheese bar over low heat and stir in a can or two of Ro-tel, to your taste and in your preferred flavor. You can also add some cooked ground sausage or beef (or both) to the dip, plus additional green chiles, lightly cooked white onion or chopped green onion (really whatever you like!). Keep the dip warm in a small crock pot and serve with tortilla chips or veggies. YUM!
I know you addressed this earlier and said it was a box rice mixture, but was the boxed rice mixture “Mexican” or Spanish” rice? I’m pretty sure I have both available to me here, or was it one of the hundreds of others? LOL? (Rice-a-Roni, Zaterans etc.?) I don’t care for store bought Rotisserie chicken, so I will buy some bone in chicken breasts and poach with celery, onions, fresh herbs and flavorings. It kills (pardon the pun), two birds with one stone! Great moist chicken AND homemade chicken broth for the freezer! Just remember to strain the broth in a fine strainer, and press the solids to get the most flavor. Cool and then freeze for that next really yummy soup stock or vegetable/potato broth!
PS. I’m saving mine for my first, fresh shucked Lima beans this year! I’ve been trying to grow Lima’s for a while now, and FINALLY I have plants!!!

I need to get a homemade version posted sometime. π I do love poaching chicken – you are right, it is so moist that way, and it’s a great way to get homemade stock. I know this is called Cheesy CHICKEN Doritos casserole, and it sounds divine (I will be making this tonight for my husband and myself- He LOVES his Doritos!), but I wonder, have you ever made this with ground beef instead of chicken? I am all about using rotisserie chickens (it’s so easy!), but for the days when I just don’t feel like leaving the house to buy one (because I hate poaching chicken)… I always have ground beef in the freezer, so I wonder if it would taste good that way. I am sure this one will be a hit and I was just wondering about the beef for the future. Thanks π

Hi Debi – the rice is not part of the casserole. I did serve ours over cooked rice (a Spanish-style), but it was a box mix. π

I didn’t have Rotel so I just used some salsa I had on hand. My kids loved it.
Can this be made ahead of time and frozen to be baked later? I’m thinking maybe the Doritos would lose their crunch. Has anyone tried this?
