I wouldn’t count on serving 8, even with the deep-dish plate. You can easily make this in a 9×13 dish–I’d use 5-6 chicken breasts and increase the veggie portions by 25% to 50%. You could leave the pie shell off of the bottom of the dish, and just bake with a top-only crust.
So pretty! The edges of your pie are gorgeous! We love chicken pot pie in our house and I use a similar technique as yours. My daughter loves using various cookie cutters to create a design on the top of the pie, even at fifteen!
Thanks, Candy! I love using those little cutters, and varying the shape to match the season. My husband’s b-day is just a few days before Valentine’s Day, so he usually gets the heart shape for his birthday. =)
i’m the same way! i never liked chicken pot pie until a little over a year ago, when i made it from scratch for the first time for my husband, who loves it. even i enjoyed it. yours looks gorgeous!
I have to say, this is my favorite chicken pot pie ever. I suppose my “liking” it has a lot to do with the fact that it’s loaded down with cheese, ha! =)
This looks really good. I also like the way you did the crust edge. Even though you used prepared crusts the technique gives the final product a home made appearance. Great pictures!
