Chocolate Biscoff Donuts with Vanilla Biscoff Glaze
These Chocolate Biscoff Donuts with Vanilla Biscoff Glaze are baked, not fried, putting a guiltless spin on a traditionally guilt-ridden treat!
These donuts almost didn’t happen.
No, let me rephrase that. This post almost didn’t happen.
In the last two weeks, the Tall Boy has been sick, my mom had surgery, my computer caught a virus and crashed, and now Doodle is sick. Not a great time around casa Kitchen Meets Girl lately.
So yeah…these donuts were going to happen, no matter what. I needed some pick-me-up baked goods in a major way.
If you’ve been around my blog any length of time, you know that I’m crazy for breakfast sweets. Okay, really any sweets, but I do have a affinity for sugary sweets I can legitimately call “breakfast food.”
Baked donuts are near the top of that list, especially since I got a donut pan…seriously the best $10 I’ve spent on anything kitchen-related. And, um, I’m notorious for purchasing all sorts of kitchen-related items. Just ask the Tall Boy. 🙂
My assignment for this month’s Secret Recipe Club was Andrea’s blog over at Adventures in All Things Cooking. Andrea had so many great recipes to choose from: like Perfect Fall Apple Crisp and Loaded Baked Potato Pizza and Peanut Butter Chocolate Cheesecake Bites. But when I stumbled on this recipe for chocolate peanut butter baked donuts, I knew right away my search was over.
While the chocolate and peanut butter combination is one of my favorites, I’ve been on a Biscoff kick lately…so I swapped Biscoff for the peanut butter in this recipe. Otherwise, I pretty much followed Andrea’s recipe to a tee, and boy howdy–were these ever good!
If you’re not familiar with Biscoff (or cookie butter), it is a jarred spread made from spiced shortbread cookies. It is similar in consistency to peanut butter and can be found in your grocer’s aisle right next to the peanut butter. Trader Joe’s also sells a version, but I don’t have a TJ’s anywhere close to me. 🙁
So, so good! And since they’re baked, I didn’t even feel that guilty eating ’em!
- 2 tablespoons butter, melted
- 2 tablespoons Biscoff, melted
- ¾ cup all-purpose flour
- ⅓ cup white sugar
- ¼ cup cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon cinnamon
- ½ cup buttermilk (or sour milk)
- 1 egg
- ½ teaspoon vanilla extract
- 1 tablespoon butter, melted
- 2 tablespoons Biscoff, melted
- ⅓ cup powdered sugar (plus more, if needed)
- 1-2 tablespoons milk or buttermilk
- Preheat oven to 325. Lightly grease or spray donut pan and set aside.
- In a small bowl, microwave the butter and Biscoff until melted, about 15 to 20 seconds.
- In a large bowl, mix together flour and the remaining ingredients until combined. Add the melted Biscoff mixture and stir to combine.
- Carefully fill donut cavites about two-thirds full, using a piping bag or a cookie scoop. Bake for 8-11 minutes, until donuts spring back when touched. These took 9 minutes in my oven. Allow to cool for approximately 5 minutes before removing from pan.
- In a small bowl, melt the butter and Biscoff. Add the powdered sugar and vanilla and stir. Slowly add milk, one tablespoon at a time, until desired consistency is reached. Dip the donuts into the glaze, and eat!
