This is the same recipe I have used and it is WONDERFUL. I always keep this on hand in the freezer and take it often to dance night. But why does yours look soooo much better? Your presentation is great!

I pretty much love anything with coconut. I just made coconut oatmeal pancakes last night for mardi gras (and to get the last of the coconut out of my house before lent)
Don’t you hate when the men in our lives COMPLAIN about our cooking? It’s like, you’d totally die without my sweet, generous meal-and-sweets-making every day. I mean, seriously. My boyfriend does it all.the.time and I’m like, it’s this or cereal and we only have the stale bits that barely make a bowl soooo… your choice, toots.
I LOVE banana bread yet have no decent recipes sooooo I can only imagine if this tastes as good as it looks (and it looks positively scrumptious, may I add) I will be in banana bread heaven, swimming in a coconut sea of happiness.
Amy, I refuse to eat bananas by themselves, but I do eat them in baked goods! Yes, you could definitely substitute applesauce in this, and quite honestly, I’ve been thinking about trying it with strawberries. Hmmm, I might have to give that a try soon!
