Easy Creamy Pasta Salad
This Easy Creamy Pasta Salad is a simple and cool make ahead side dish for company or potluck. Bonus? It’s a great way to get your veggies in!
If there is one side dish I love to make during grilling season, it’s pasta salad. And this Easy Creamy Pasta Salad is my new favorite.
I know – I think each time I post a recipe I say it’s my “new favorite.” Hazard (benefit?) of the job, I guess. I’m always looking for and trying out new recipes, so it seems like there are very few things that we eat multiple times.
We’ve had this pasta salad three times in the last three weeks. 😀
This Easy Creamy Pasta Salad is so easy to make, and totally customizable. I listed the vegetables I included in my version, but you can switch things up and include whatever ingredients your family enjoys.
A disclaimer here: I absolutely hate cottage cheese. I’ve tried everything I can think of to like it (you know, like mixing in fruit), but I just can’t bring myself to eat it. And I want to like it – boy, do I want to like it – since it’s a fairly healthy food. So, when my mom brought this pasta salad to my aunt’s house on Easter, I was really hesitant to try it.
I loved this pasta salad, despite the fact that it uses a 24 ounce container of cottage cheese. It doesn’t taste “cottage cheesy” at all – just cool and creamy and perfect
- ½ pound (8-ounces) small shell pasta (cooked, drained and cooled)
- 24 ounces small curd cottage cheese
- 1 cup sour cream
- 2 tablespoons mayonnaise
- 2 teaspoon salt
- ½ teaspoons pepper
- 5 green onions, chopped
- 1 bell pepper, chopped (I used ½ red pepper and ½ orange pepper)
- 2 tomatoes. chopped
- In a large bowl, combine pasta with cottage cheese, sour cream, mayonnaise and salt and pepper.
- Add in vegetables and stir to coat.
- Keep refrigerated until ready to serve.

Interestingly enough, I didn’t grow up with an interest in cooking. In fact, I informed my mother on multiple occasions that I was not getting an advanced education so I could spend my evenings preparing meals.
