A disclaimer here: I absolutely hate cottage cheese. I’ve tried everything I can think of to like it (you know, like mixing in fruit), but I just can’t bring myself to eat it. And I want to like it – boy, do I want to like it – since it’s a fairly healthy food. So, when my mom brought this pasta salad to my aunt’s house on Easter, I was really hesitant to try it.
I loved this pasta salad, despite the fact that it uses a 24 ounce container of cottage cheese. It doesn’t taste “cottage cheesy” at all – just cool and creamy and perfect
