So here’s the deal. I lucked out and got to marry my best friend. Sometimes I can’t believe my good fortune in snagging this guy. Between us, we made the cutest little Doodlebug, who is our absolute world. I’ve got a full-time work gig that I love. A fabulous family. Great friends. I am blessed.
But balancing that is difficult. Sometimes impossible. I daydream about coming home to a spotless house cleaned by a professional cleaning service, with steaming hot meals prepared by my own personal chef. But since that’s not going to happen, and because I want my son to grow up healthy and nourished by good, wholesome food, I’ve learned to cook. More surprising, I discovered that I actually enjoy it.
I also discovered that it doesn’t have to be stressful or time-consuming to create meals that are not only good for you, but actually taste good.
I don’t have a SLR camera like many of the super food bloggers out there. Even if I did, I wouldn’t know how to use it. I barely know what to do with the point and shoot I have.
As of June 2012, I use a Nikon D3100 and a 50mm lens. I still don’t know how to use it.
I am addicted to tortilla chips.
I like to wear a ton of dangly bracelets. Someone once told me it makes you look thinner. I figure it’s worth a try.
I’m crazy about football. Craaaaazy. I’m not a pleasant person to be around when my team is losing.
I like red wine and chocolate. They are proven health foods, you know.
And I’m living proof that anyone–absolutely anyone–can be successful in the kitchen.

Interestingly enough, I didn’t grow up with an interest in cooking. In fact, I informed my mother on multiple occasions that I was not getting an advanced education so I could spend my evenings preparing meals.
