Flourless M&M Oatmeal Cookies

Serves: 10 cookies
  • ¾ cup oat flour (I like Bob's Red Mill)
  • ¾ cup traditional oats
  • ¾ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ cup baking Stevia (I like NuNaturals Blend)
  • pinch of salt
  • 1 teaspoon vanilla
  • 1 large egg
  • ½ cup peanut butter (I used White Chocolate Wonderful)
  • 2 tablespoons honey
  • ¼ cup mini M&M's
  1. Preheat oven to 350. Line a cookie sheet with parchment paper or a Silpat and set aside.
  2. Combine oat flour, oats, baking soda, cinnamon, Stevia, and salt in a medium bowl and stir to combine.
  3. In a small bowl, mix together vanilla, egg, peanut butter and honey until smooth.
  4. Pour peanut butter mixture into flour mixture and stir together until the mixture forms a dough. Divide mixture into 10 balls and drop onto cookie sheet, pressing down slightly into disks. Top with M&Ms (you may also stir candies into dough).
  5. Bake cookies 7 to 8 minutes, or until just set. Remove pan from oven and allow to cool on wire rack.
