Easy Creamy Pasta Salad

This Easy Creamy Pasta Salad is a simple and cool make ahead side dish for company or potluck.  Bonus?  It's a great way to get your veggies in!
Serves: 12 servings
  • ½ pound (8-ounces) small shell pasta (cooked, drained and cooled)
  • 24 ounces small curd cottage cheese
  • 1 cup sour cream
  • 2 tablespoons mayonnaise
  • 2 teaspoon salt
  • ½ teaspoons pepper
  • 5 green onions, chopped
  • 1 bell pepper, chopped (I used ½ red pepper and ½ orange pepper)
  • 2 tomatoes. chopped
  1. In a large bowl, combine pasta with cottage cheese, sour cream, mayonnaise and salt and pepper.
  2. Add in vegetables and stir to coat.
  3. Keep refrigerated until ready to serve.
