Banana Cupcakes with Dulce de Leche {and a giveaway!}
Ingredients
For the Cupcakes:
1 box yellow cake mix
1 cup mashed bananas
⅔ cup buttermilk
⅓ cup vegetable oil
4 large eggs
For the Topping:
1 can (13.4 oz) dulce de leche (caramelized sweetened condensed milk) Coarse (kosher or sea) salt
Method
Preheat oven to 350.
Combine the cake mix, bananas, buttermilk, oil and eggs in a large bowl. Beat with an electric mixer until moistened, about 30 seconds. Increase speed to high, and beat until thick, about 2 minutes more.
Fill cupcake papers about ⅔ full with the batter. Bake until golden, about 15 to 18 minutes.
Remove cupcakes from baking pan and allow to cool completely on a wire rack.
Top each cake with a swipe of dulce de leche and sprinkle with salt.
