15-Minute Strawberry Jam
  • 3 cups fresh strawberries, hulled, and halved or quartered if large
  • ¼ cup sugar
  • 1 teaspoon lime zest
  • 1 tablespoon fresh lime juice
  • ½ teaspoon vanilla (optional)
  1. Place strawberries and sugar in a medium saucepan over medium-high heat. Cook, stirring occasionally, until the berries appear jam-like in consistency - about 12 to 15 minutes.
  2. Remove from heat, and stir in lime zest, juice and vanilla. Allow to cool completely.
  3. Store jam covered in refrigerator for up to one week.
