Frozen Blueberry Lemonade

Here’s the thing about the sun and me: we don’t mix.

Not even a little bit.

If we’re being honest, I have a very narrow window of temperature ranges I’m comfortable in (bless you, Tall Boy, for loving me anyway).  And 100+ degree Kansas heat is not one of them.  Especially considering the fact that I’m pretty much as fair-skinned as a person can be.  Seriously, I slather on SPF 50 and still manage to get a sunburn?

We enjoyed the majority of our day off on the Fourth at the pool.  I felt well-prepared for the day, by applying a very generous layer of sunscreen, finding a chair in the shade, and lounging on it while wearning a cover-up and a floppy beach hat and sunglasses.

Take that, sun, I thought, thumbing my nose as I relaxed a bit into the pages of my paperback.

Except that eventually, my little shady spot lost its shade.  And a black swim suit cover up is not really what you want to be wearing in 103 degree heat.   So I took it off, cooled off for a few minutes in the pool, and went back to reading.

But then I got hot again.  Like really hot.  Super hot.  The kind of hot that leaves you shaky and lightheaded and glistening with ew–sweat.  And then the worst thing ever happened: the pool party organizers decided to have relay races and blocked off the pool.  Who does that?  Who blocks off a pool during a pool party?

All I could think about on the drive back home was faceplanting myself into a bucket of ice-water.  Or downing about a gallon of this frozen blueberry lemonade.

It’s quick to blend up, and requires only four ingredients (not counting the ice).  And while the mint isn’t an absolute neccessity, it does add a little extra crispness to this icy drink.  Technically, this recipe makes four servings, though I pretty much drank the entire blenderful myself.

Frozen Blueberry Lemonade
  • 1½ cups blueberries
  • 1 cup lemonade (I used Crystal Light)
  • ½ cup mint leaves
  • ¼ cup powdered sugar
  • 3 cups ice
  1. Add all ingredients to blender and pulse until smooth.
  2. Garnish with additional mint sprigs and blueberries, if desired.

    Okay, if you come swimming at my house I will NEVER block off the pool. You might get chased/splashed/drowned by a 7 year old, but at least you’ll be in. 🙂 Love this drink! It sounds so refreshing!

    Blueberry Lemonade + Strawberry Mademoiselle are my go-to drinks in the summertime. I have NEVER had either of them frozen though. It sounds and looks incredible. Especially in this heat. This summer has been a scorcher!

    Blueberry lemonade sounds phenom. And in other news, you and I are meant to be. I have an even narrower range of heat temperatures–I’m surprised you tolerated 100+ degrees because I am begging desperately for the AC to turn on when it’s 85. And 85 here, is springtime. Ugh, let’s move to Seattle? Or San Francisco, where there’s perpetually awesome weather. Not too hot, not too cold. And STILL perfect for this lemonade 🙂

    Oh man, the nerve!! Glad you survived the crazy heat. It’s been pretty steamy here too,and I just stay inside as much as possible 🙂 this blueberry lemonade looks sooooooo good right now! I would drink the whole blenderful myself too. Who could resist, especially in this heat?

    I have to say that I do love being outside at the beach or pool…except when it is over 100*. It has been absolutely unbearable here too!!! That is horrible that they blocked off the pool…at a pool party no less!!! This drink looks amazing!!! I can totally see why you drank it all;-)
