We grill out almost exclusively in the summertime, simply because it’s too darn hot to do much of anything else.
And it’s still only the beginning of June.
If you’re like me, you get tired of the same old meats and veggies thrown over the open flame–and by the time dinner time rolls around, I’m usually too hot and tired to do very much kitchen prep.
Which is why I love quick and simple marinades–you can mix ‘em up in less than five minutes early in the day, and all you have to do at dinner time is throw stuff on the grill. This is hands-down my favorite kind of cooking.
What’s your favorite way to cook in the summertime?
If you're using bamboo skewers, soak your sticks in water for at least 5 minutes. Cut chicken into large chunks, and skewer. Allow to marinate for at least 1 hour.

Liz–you are such a doll! But I’ve seen your pics, and they are phenomenal! Believe me, I’m the last person anyone would want doing a photography post. Seriously, check out some of my earlier pictures(wait…don’t)! I’m just learning as I go.
these look great! we grill out a lot in the summer, too, for the same reason. it’s hard to get excited about cooking/baking when it’s a zillion degrees outside!

Your pictures are rockin’, girlfriend! Well, they always have, but I’m loving these ones! And I love kebabs but am so uninventive with them per usual–I save all my creativity for baking and absolutely ZERO for much else cooking-wise. I want to dress next week’s kebabs up with this because the more spicy and cilantro, the BETTER. Sooooo yummy. Live closer to me!

This photo is beyond beautiful – looks so good! I am so lucky that my other half loves to grill (and gets great pleasure in me asking him to help with my creations) – this way I get the fun mixing up yummy recipes and he gets the “work” of grilling. This will be next week’s Grilled Chicken Dish I am thinking!!

Looks great. I am the cook in our home, but thank goodness my hubby eats about anything I put in front of him. This recipe should work. A few questions…do you marinade the chicken breats whole and then cut them up for skrewering/grilling and what is Siracha and is there a subsitute for it?? Thanks.
Hi Diane–I’ll have to do some tweaking to my post, since my mom pointed out to me this morning that not everyone knows what Sriracha sauce is.
It’s an Asian chili sauce, and you can usually find it in the Asian/International aisle in your grocery store (even Wal-Mart carries it!). It’s spicy, vinegary, garlicky, and a little sweet and the best thing EVER for adding some heat and a lot of flavor to an otherwise bland dish. I’m not sure of an appropriate substitute, since it’s quite a bit thicker than Tabasco–so readers, any ideas??
This is a perfect summer recipe! I can’t wait to try it!

Can you use Tabascco or Tapito
Alison, I know I’m late to the party here (just found this recipe via Pinterest), but when a recipe calls for hot sauce, you can always substitute your favorite. Either Tabasco or Tapitio would work, but you might want to kick up the garlic just a tad.
The sriracha is very unique in flavor, and so it’s probably a major reason this simple recipe works so well. Loaded with garlic and fresh sun ripened chile taste, if you can find it, try it. Sometimes called “Rooster Sauce” because of the ubiquitous label on the plastic squirt bottle, it’s available everywhere these days.
I’ve added this recipe to my must try file. Thanks Ashley!

Made this tonight for father’s day dinner. It was so simple and delicious! The only suggestion I would make to others is to be sure that your cut your chicken in large chunks as chicken on kabobs tends to dry out.
I would like to try this recipe on an indoor grill. Any tips?
Wow! I found your recipe on Pinterest today and grilled it tonight. My husband said we’re going to make this often…he loved it and so did I. It was one of the best marinades for the grill I’ve tried lately. The chicken was so moist and the marinade had just enough bite to make it interesting. Thanks for such a delicious recipe!
Tried this tonight and it was super easy and so delicious!
Oh my! These look divine! Off to Whole Foods to find some Siracha….

This was fab! Made it last week and was just looking at recipe to see what I need to make it again tomorrow!
Wow…made these tonight for my family. Everyone loved them, especially my 3 year old son. I did omit the red pepper flakes because I had never cooked with sriracha before and I was scared it would be too hot for my kiddos (8 yr. old daughter, too). Definitely working its way into our normal rotation of recipes! YUMMO!!!!
These look positively delightful! I love skewered anything – and if it has lime and cilantro – I’m SO There!

This looks amazing! I will be trying this for our 4th of July BBQ. How many does this serve?
Hi Kelly! This recipe uses 1 pound of chicken breasts, which for my husband and myself made two meals. So just adjust the marinade accordingly, depending on how many people you’re serving and how much they typically eat! =) If you don’t want to skewer that much chicken, this works great on whole breasts (or thighs), too. Have a great holiday!
Just Great! Made these for dinner along with some cilantro lime rice- great!
I am in love with this recipe. I marinaded shrimp and chicken and both turned out sooo good!! I added more siracha and a ton of red pepper flakes. I love my food spicy! I paired it with grilled veggies and brown rice. Was thinking I could add it to a salad as well. =)
This was amazing! It’s my new go-to recipe for grilled chicken. I left out the red pepper (little kids), cilantro and sarachi sauce but next time I’ll try adding the sarachi. It was fantastic but would’ve been even better with some heat. Oh, and I marinated while chicken thighs instead of skewering them. Even my kids cleaned their plates! Thank you!
Yum! I have this on my menu for this week. Thanks.
I made these for dinner tonight and they were excellent. Really easy to prep and cook and the flavor was awesome. I charred mine a little too much so next time I’ll keep a closer eye on them and probably only cook 5 min. or less on each side. Thanks for the delicious recipe!
I made this recipe tonight and it was amazing. I found it off of pinterest and honestly it’s the most amazing thing ever! But I used chicken thigh which probably made it more tasty!!!
I love recipes like these. Such simple ingredients but an awesome combination. Can’t wait to try ASAP!

Made the Honey Lime Chicken Skewers for supper tonight. Super easy and really yummy-a little spicy for my picky daughter, but I would definitely make them again!
First time on your page and so tonight I made these and they were wonderful!! I didn’t do skewers just cut each breast into 3 pieces and grilled them in a basket. Thanks!!
So glad you liked them! Thanks for stopping by!
Saw this recipe on pinterest and made these last night on the indoor grill pan and they were DELISH!!! Quick and easy marinade that makes for flavorfull, delicious grilled chicken. I swear it tasted like it was grilled outdoors. Loved this recipe…cannot wait to try again with pork chops and fish.
Made these last night but instead of skewers just did chicken breasts on grill pan (in my tiny nyc kitchen) – AMAZING!!! Sooo tasty and easy!
hey ashley
lovely looking recipe u have posted here.. just a quick question…WHAT IS SIRACHA? help pls…

Hi Middy–

These are amazing. I just posted about them on my blog. You should check it out, especially the part where my friend tries to explain what siracha is to me.

But can’t wait to try them!
Confused, do you use the cilantro in marinade? Directions a bit fuzzy on that. Also, what is Siracha? thanks
Laura: It looks like the cilantro is in the marinade. Chop it up nice and fine.

Ashley, Thank you so much for this recipe! I just found it on pinterest and made it tonight. I am a huge fan of Sriracha sauce (we call it rooster sauce because of the rooster on the bottle…lol). Wow the favors are awesome and my husband loved it as well. Mine even turned out very close to your picture
My boyfriend and I have made these on several occasions and everyone always devours them, they love them so much! (as do we!) They are by far, one of the better chicken skewer recipes that we have tried. Beautiful combination of sweet, tangy and just the right amount of heat.
Thank you for sharing!!
Awesome I can’t wait to try it. It sounds and look delish!!
So what is the rice dish that looks so good?
Becky–the rice pictured in this post is my favorite version of coconut rice. I’ll try to make it and post it soon–it’s quick, easy, and a super side for many different dishes!
Can’t wait for the rice dish…thanks

Made this chicken for dinner; served it with salad. This is a great marinade, & I highly recommend it! I reduced the leftover marinade to use as a sauce. Excellent!
These look amazing. Beautiful, and simple. I cannot wait to make them!

I’ve just starting looking for recipes with Sriracha and this has become a family favorite!
Can anyone help me with side dish ideas for this. My dad is retiring this week and I told him I would make him dinner to celebrate. I suck in the kitchen so I need very specific instructions.
Made these tonight with chicken tenders. Too cold to grill so I just broiled them a few minutes on each side–wonderful! I can’t wait to try them on the grill using boneless,, skinless thighs–thighs are meant for a recipe like this.

I made this last night and just loved it. It was easy, it tasted great, and everyone in the family loved it. This recipe will definitely go into my recipe box as a keeper.
Made these tonight and my husband and I both thought they were phenomenal! We left out the red pepper and used the extra juices to baste the kabobs while they were on the grill.. We will definitely be adding this to our ‘make again’ list! Thanks so much for the recipe!
Found these on Pinterest about 2 weeks ago. We’ve had them 3 times so far!! My boyfriend and I LOVE them. It’s so good. One of those times, we tried doing it on whole chicken breasts, instead of skewers. It didn’t come out as good. If you try it that way, I’d make a separate bowl of the marinade (one that hasn’t had raw chicken in it), warm it in a small sauce pan, add a little bit of flour to thicken it, and use it as a sauce/glaze/dip.
Thanks!
I am the Mom of Five and made three pounds of chicken (tripled the marinade). Each of my kids ate at least two skewers a piece! Excellent! It will always stay in my summer rotation. Thank you!
Love! My lemon was gross so I used the juice from an orange and served the chicken over cheesey parmesan quinoa. It was a huge hit. Thanks for the recipe. =)
I just made it for dinner. It was a HUGE it with all family members. Thanks so much for a delicious recipe!!!
