Spiced Peach and Carrot Bread

Did I mention we just got a bushel of peaches?

Well, we did. So I’m putting ‘em into everything.

One diced up in my oatmeal in the morning. In smoothies. In salsa, over fish and chicken.

And pie. Yeah, that’s coming, too.

Oh, and this bread?  Is.so.good.  With hints of cinnamon and nutmeg, along with some shredded carrot, I’m definitely getting into the fall baking mode.

I can’t wait.

Is it too early for me to start posting fall recipes?  Because I can hardly stand it.

Spiced Peach and Carrot Bread

Spiced Peach and Carrot Bread

Make this easy, one-bowl, spiced peach bread to get you in the mood for Fall baking!

Ingredients

  • 2 1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups peeled and chopped fresh peaches
  • 3/4 cup grated carrots
  • 2/3 cup vegetable oil
  • 1/2 cup milk
  • 2 eggs, lightly beaten
  • 3/4 cup white chocolate chips and/or pecans, optional

Instructions

  1. Preheat oven to 350.
  2. In a large bowl, sift together flour and the next 6 ingredients. Add peaches, the next 4 ingredients, and the white chocolate chips/pecans, stirring until just moistened. Spoon batter into a greased 9x5 inch loaf pan.
  3. Bake for approximately 65 minutes, or unti a toothpick inserted in the center comes out clean. Cool in pan on wire rack for 5 minutes. Remove bread from pan and allow to cool completely.

I know what the lack of caffeine can do! =) I’ve had this peach-carrot bread bookmarked in a magazine since last fall, just waiting until I got my yearly bushel of peaches to make it…and it didn’t disappoint! But your mango banana bread–ooooh, I’m still dying to make that (my husband keeps hinting around at it, too. He LOVES mango!).

  10. The peach and carrot combo looks great! I’ve been more of a laggard on the fall recipes, but today there were so many good looking winter squashes at the farm stand that I had to buy some, so I suppose I’ll be making some fall recipes soon. Still buying peaches and raspberries, too, though, I can’t give up that summer fruit before I have to.
