I have been doing this for a year or so. I don’t do it in the crockpot though, so I will have to try that when school starts and we get super crazy. I boil my chicken and shred it and then cook it down again with the salsa for a minute or two. It’s great because those trace packets are so salty to me andi found I didn’t like it. A can of rotel tomatoes also works well. And the kids don’t realize they are eating some veggies! My pumpkin starts kindergarden in a week- and I’m not happy about it. She is though, I went to book day and her teacher sent a note and she slept with it!
That is so sweet that she slept with the note! I think the start of kindergarden is harder on moms than it is for the kiddos! I like your idea, too, to boil the chicken and then add the salsa. Still quick and easy!
Haha “so he never forgets about the person who gave birth to him.” I doubt Doodle would ever forget someone like you–you make him incredible treats like these tacos and all those delicious baked goods 🙂 still, I don’t even know Doodle and *I* can’t believe he’s in kindergarten! Oooh, Amy, I hope you like the crock pot. I do actually use mine quite a bit, especially for soups and stews in the fall/winter. And this chicken taco recipe is one of my faves because it requires zero effort.
this is probably the weirdest thing you’ll ever read but chicken and salsa are two of my favorite foods. Even though salsa is sorta kind a condiment, I could DEFINITELY eat an entire jar. Sally, I don’t think that’s weird AT ALL. ‘Cause I’ve been known to eat an entire jar of salsa in one day…by myself. And yeah, I like chicken, too, especially WITH salsa (and a margarita).

Great minds think alike, Ashley! We always have chicken tacos and wraps. They’re so delicious. I too, use salsa from a jar and salad. I usually do a whole feast of salad stuff from lettice, cucumber, tomatoes, red/green peppers, and somtimes cheese too.

My youngest did that when he went to kindergarten too! It was the saddest day when he wouldn’t let me walk him to his class!!! Seriously? We are the momma’s and I say stalk his class every week:-) And 2 ingredient tacos…love it!! Perfect dinner after a day of stalking our kids!!!! My home health nurse gave me a recipe similar to this last week. Cooked it Friday and my family went CRAZY over it! Just a couple of changes-
Instead of salsa, I used a large jar of picante sauce and added an envelope of chicken taco seasoning. That was all her recipe called for. BUT, due to health problems and me on a high protein diet, I decided to add in a can of rinsed black beans and a can of drained whole kernel corn. We had soft and crunchy tacos. AMAZING DISH!!!
This is perfect for a easy quick dinner. And who doesn’t like tacos.
