Cherry Coconut Donuts

Happy Birthday my little Doodlebug.

I can’t believe you’re five years old today.

My whole world changed that first moment I held you in my arms.  In an instant, I became something greater than I was before.

Your mama.

I never dreamed that one person could love another so much. It overwhelms me, at times, this love that I have for you. The sheer pride I feel watching you learn and grow and become your own very independent person. And my heart aches for the day that you no longer want to sit on my lap or hold my hand or let me cover you with kissies at bedtime.

Or call you Doodle in front of your friends.

But for now, you still like pink donuts.

So let’s eat ’em.

Cherry Coconut Donuts

Ingredients
For the donuts:
  • 2 cups flour
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ¾ cup coconut milk
  • 2 eggs, lightly beaten
  • 1 teaspoon coconut extract
  • 2 tablespoons butter, melted
  • ¼ cup vegetable oil
  • 1 7-ounce jar marischino cherries, drained and chopped (reserve the juice)
For the icing:
  • 1½ cups powdered sugar
  • 2 tablespoons coconut milk
  • ¾ teaspoon coconut extract
  • 1 tablespoon reserved cherry juice
  • toasted coconut
Method
  1. Preheat oven to 325. Spray a donut pan with cooking spray.
  2. In a large bowl, combine your dry ingredients. In another large bowl, combine remaining ingredients, through the vegetable oil. Stir dry ingredients into your wet ingredients. Carefully stir in chopped cherries.
  3. Fill donut pan with batter, about ⅔ full.
  4. Bake for 10 to 12 minutes, until toothpick inserted in the center comes out clean. Cool on a wire rack.
To make the icing:
  1. Whisk together all icing ingredients; dip the tops of the donuts into the icing and sprinkle with toasted coconut.

    Awh, Happy Birthday Doodle! What a cutie. He’s such a good little boy and you’re such a great mama for so many reasons, but one of them is making these donuts for him! They look awesome. Cherry + coconut… sounds delicious. And I’m sure Doodle loved the pink! 🙂
