Coconut Mango Smoothie {with Banana and Lime}

I hestitate to say this, but I’ve never really been a smoothie fan.

Well, let me rephrase: there’s not a thing wrong with smoothies, I’m just not entirely sold on drinking my calories and calling it a “meal,” unless we’re talking about root beer floats or margaritas.

And as “grown-up” as I’ve gotten in the last few years about eating vegetables, I just can’t fathom adding spinach or other greens into my blender with fruit and milk/yogurt/et cetera, and drinking it.

I’m sorry, I just can’t do it.

I know, I know, you probably can’t taste the vegetables at all, and I’m sure it’s an uber healthy power drink…but no.  Still not happening.

But this?

This I can do.

Coconut Mango Smoothie {with Banana and Lime}
 
Print
serves 2, adapted from Daily Bites
Ingredients
  • 1 cup chopped mango
  • 1 banana, sliced and frozen
  • ½ cup coconut milk
  • ½ cup water
  • a handful of ice cubes
  • ½ teaspoon lime zest
  • 1 sweetener packet, or ½ teaspoon sugar
  • ½ teaspoon coconut extract
Method
  1. Combine all ingredients in a blender.
  2. Blend on high until smooth and creamy.

    Oooooh, I love smoothies but I hate when I get chunks or seeds; not a fan! But this looks so smooth and healthy and yummy… and you know how much I love coconut and your drink suggestions 🙂

    Your smoothie sounds really good! I like coconut flavor, but not necessarily pieces of coconut, so I like how it just uses coconut milk. I would love to try this one. I’m glad I am not the only one to admit that I’m not crazy about smoothies!

    This looks delicious! I like to add spinach to smoothies sometimes, you honestly can’t even taste it. You can try adding it to a smoothie with chocolate in it and then you won’t see it either! Jen #59
