Easy Pizza Casserole
This Easy Pizza Casserole was a real lifesaver last week.
I was just getting over the worst crud I’d had in years, and the Tall Boy and Doodle had been without a home-cooked meal over a week. The Tall Boy is very self-sufficient and a totally awesome dad, but his dinner prep skills are basically limited to grilling out {it’s too cool here for that now}, spaghetti, tacos and broiled fish.
Combine that with balancing after-school activities on his own, trying to keep the house looking halfway decent and the laundry under control while I hacked up a lung…well, let’s just say that he was happy when I was feeling well enough to finally head back into the kitchen. 😉
Even on the upswing of coming out of my funk, I wanted a recipe that (1) would allow for leftovers; (2) did not require much any effort; (3) would appeal to a 6-year old; and (4) was comfort food!

- 16 oz uncooked fettuccine
- 1 lb ground beef
- 2 (24 oz) jars pasta sauce
- 2 cups shredded mozzarella cheese
- 3.5 oz package sliced pepperoni
- fresh oregano for garnish, if desired
- Preheat oven to 350 degrees.
- Cook pasta according to package directions.
- Cook ground beef in a large nonstick skillet over medium heat 8 to 10 minutes or until browned.
- Spread a thin layer of pasta sauce in the bottom of a 13x9-inch baking dish coated with cooking spray. Top with half of cooked pasta, half of ground beef, half of remaining sauce, and half of
- cheese. Repeat layers. Cut pepperoni slices into quarters, if desired, and sprinkle over cheese.
- Cover with aluminum foil, and bake 30 minutes.
- Uncover and bake 15 minutes longer or until bubbly and browned. Let stand 10 minutes before serving
You can easily adjust the fillings in this recipe to your own tastes – I think sautéed mushrooms, onions, and green peppers would be a great addition. Just throw your favorite pizza toppings in with the cooked ground beef to give this recipe your own twist!
