This Scrumptious Strawberry Bread is sure to become a family favorite.  It comes together in a snap, and it makes the perfect breakfast, snack, or dessert!  Since it uses frozen berries, you can enjoy this easy quick bread year round!
Serves: 2 loves
  • 1 15-ounce package frozen sliced strawberries, thawed
  • 4 eggs
  • 1 cup unsweetened applesauce
  • ¼ cup vegetable oil
  • 3 cups all purpose flour
  • 2 cups sugar
  • 3 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup chopped nuts, optional
  1. Preheat oven to 350 F. Spray two 9x5 loaf pans with non-stick cooking spray. Set aside.
  2. In a medium bowl, stir together thawed strawberries, eggs, applesauce and oil.
  3. In a large bowl, combine flour, sugar, cinnamon, salt, baking soda, and nuts (if using). Add the strawberry mixture to the flour mixture and stir just until blended. Pour into pans.
  4. Bake at 350 F for 60 to 70 minutes. Cover the bread loosely with aluminum foil after 30 minutes to prevent the top from getting too brown. Poke the center of the bread with a toothpick at 60 minutes. If it comes out clean, the bread is done. If it comes out wet, bake longer. Allow bread to cool completely in the pan on a wire rack before slicing.
