Spinach Balls
Author: recipe from my mama!
Serves: 50
- 2 small packages frozen chopped spinach (cook, drain, and squeeze dry with your hands)
- 2 cups stuffing mix
- 2 medium onions, grated fine
- ½ cup chopped water chestnuts
- 6 eggs, lightly beaten
- ¾ tablespoon butter, melted
- ½ cup parmesan cheese
- ½ teaspoon garlic salt
- ½ teaspoon red pepper flakes
- a dash of Tabasco
- Mix all ingredients together, and form into balls. I used a small cookie scoop.
- Bake at 350 for 5 to 7 minutes.
This makes a huge batch--about 50 appetizers, but they freeze well.
