Ingredients
  • 2 small packages frozen chopped spinach (cook, drain, and squeeze dry with your hands)
  • 2 cups stuffing mix
  • 2 medium onions, grated fine
  • ½ cup chopped water chestnuts
  • 6 eggs, lightly beaten
  • ¾ tablespoon butter, melted
  • ½ cup parmesan cheese
  • ½ teaspoon garlic salt
  • ½ teaspoon red pepper flakes
  • a dash of Tabasco
Method
  1. Mix all ingredients together, and form into balls. I used a small cookie scoop.
  2. Bake at 350 for 5 to 7 minutes.
Notes
This makes a huge batch--about 50 appetizers, but they freeze well.
