Cucumber, Red Onion, Feta and Dill Salad
- 2 cucumbers, halved lengthwise and thinly sliced on the diagonal
- 1 medium red onion, halved and thinly sliced
- ¼ cup white wine vinegar
- 2 teaspoons sugar
- ¼ teaspoon salt
- crumbled feta cheese, to taste
- Coarse salt and ground pepper
- In a large bowl, whisk together the vinegar, sweetener and salt/pepper. Toss in the cucumbers, red onion and fresh dill.
- Cover and chill--at least 1 hour, to let the flavors intensify.
- Before serving, toss with crumbled feta cheese.
- If you want to be naughty--add in some crumbled bacon!
