{Lightened Up} White Chocolate Pumpkin Nog
- 5 cups light vanilla soy milk
- 1 small package sugar-free instant white chocolate pudding mix
- 6 packets sweetener
- ⅔ cup pumpkin puree
- ½ teaspoon cinnamon
- ½ teaspoon pumpkin pie spice
- ¼ teaspoon nutmeg
- 1 teaspoon rum extract, if desired
- Blend all ingredients together until smooth. Refrigerate approximately 2 hours prior to serving, to allow mixture to thicken slightly.
