Red Velvet Crinkle Cookies
- 1 box red velvet cake mix
- 6 tablespoons butter
- 2 large eggs
- 1 cup white chocolate chips (optional)
- 1 cup powdered sugar
- 1 teaspoon cornstarch
- Preheat oven to 375. Line a baking sheet with parchment paper or Silpat and set aside.
- Melt butter; set aside to cool. Place powdered sugar and cornstarch in shallow dish. Mix with a fork to blend.
- In a large mixing bowl, combine melted butter, eggs, and cake mix; mix by hand until a dough forms. Fold in white chocolate chips, if desired.
- Form dough into 1-inch balls and roll in powdered sugar.
- Bake for 9 to 11 minutes or until set. Cool 1 minute. Transfer to wire rack to cool completely.
