Mini No-Bake Pumpkin Pies
  • 1 package (16 count) mini shortbread pie shells
  • 4 ounces cream cheese, softened
  • 1 cup pumpkin puree
  • 3 tablespoons dark brown sugar (light brown sugar is also fine)
  • 1½ teaspoons pumpkin pie spice
For the whipped cream:
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1-2 tablespoons KahlĂșa Pumpkin Spice
  1. In a medium-sized mixing bowl, beat together cream cheese, pumpkin sugar and pumpkin pie spice. Carefully spoon pumpkin pie filling into shortbread shells, and top with whipped cream.
For the whipped cream:
  1. Beat together cream, powdered sugar and KahlĂșa until peaks form. Dollop cream on top of pies.
