Fluffy Peanut Butter Dip

So, with the advent of Pinterest, I’m really learning just how unimaginative I really am.
I’m lucky just to get lunches assembled before racing out the door in the mornings, let alone create some time-consuming, likely to be uneaten anyway Bento box that’s probably really going to impress only me. Don’t get me wrong, I’m not saying I don’t want to be one of those moms who sends her kid off to school with a lunch box that’s filled with rice formed into the shaped of a panda head or a sandwich expertly designed to look like SpongeBob, but I’m going to let you in on a little secret:
It’s just not happening up in here.
By the time I’m off work and drive across town to pick Doodle up after school, it’s nearly 5:00. Twice a week, we have to be to karate class by 5:30 and don’t get back home until nearly 7:00. Then there’s dinner prep/eating/cleaning up, going over school day papers, family time, bath time, etc. Spending a crazy amount of time packing a lunch box just isn’t on my radar.
And if I had to guess, I’d say maybe it’s not on yours, either.
That being said, I do want to send Doodle off to school with a healthy, fun lunch…but it has to be something he’s willing to eat and I’m willing to make. And guess what? It really doesn’t have to be time-consuming.
These new LunchBlox kits from Rubbermaid really helped me build a better lunch easily – and Doodle was actually excited about the process! He loved the individual sized containers – they’re perfectly sized for little hands.
The containers are colorful, easy-to-open, and my favorite — leak-proof– and stack and snap to stay organized in any lunch bag. Plus, they come with a chill pack to keep the healthy lunches cool until they’re ready to enjoy.
Doodle also loved this little “submarine” sandwich surrounded by fish-shaped cheese crackers. He swiped this sandwich immediately after our “photo shoot” and gobbled it up – and then asked for another! This kind of thing is a big deal when your kid typically says he’s full after two grapes and one bite of mac and cheese. 🙂
You could easily substitute the turkey and pepperoni for peanut butter and jelly (sugar-free strawberry Smuckers strawberry is our favorite) or your favorite sandwich toppings. Doodle loved the fish-shaped sandwich piled on top of a blue napkin “sea.” Hey, we’re easy to please around here, and good old peanut butter and jelly is always a winner with kids. It just screams “back to school,” doesn’t it? And it’s also something good you can feel good about feeding your kids – if you’re like me, the school lunches of chicken nuggets and corn dogs don’t exactly make me feel confident that my kiddo is eating healthy.
I filled the other containers with carrot sticks, apple slices and some fluffy peanut butter dip.
Because lunch time dessert is important to a first grader. And, if it gets him to eat all of his apple, I’m all for it.

I spotted Jif’s new whipped creamy peanut butter while we were out shopping for lunch supplies, and well…we had to try it. The texture was fluffy and creamy, making it the perfect consistency for easy dipping. I combined some with cream cheese, brown sugar, and a bit of milk – and then we couldn’t stop eating it.
I have a feeling getting Doodle to eat a healthy lunch this school year won’t be a problem.

- 1 cup Jif Whipped Creamy Peanut Butter
- 1 cup brown sugar
- 1 (8-ounce) package cream cheese, softened
- ¼ cup milk
- Mix all ingredients together in a bowl until smooth. Refrigerate until chilled.
- Garnish with mini M&M's, if desired.

Love those little containers!! I know what you mean about not having enough time for extra things. Life seems crazy busy already with my kids back in school. I will have to make some of this yummy peanut butter dip for them!!
I love these containers. I bought them from Walmart at the beginning of the school year and they are wonderful. No squished sandwiches or chips. Tons of fruit and other things they love and the ice pack fits perfectly. I am going to have to try this dip to send with them because they love apples and PB. Thanks for the share 🙂

Oooo! This looks sooo good! I love Peanut Butter. The only thing I have question about is the brown sugar. Peanut Butter is sweet as it is so how much sweeter does the brown sugar make the dip. Does it really need it if you don’t want it too sweet or to save on calories. haha
