Lasagna Rolls with Meat Sauce – Easy Meal Plan Sunday {Week 7}
So, we’re just a full week into summer vacation, and things are already getting busy. Camps, swimming pool, Friday night spar wars at karate, playing from dawn until dusk with neighborhood friends on the weekends…whew. I’m already tired thinking about our packed calendar. What’s on yours this summer? If you need help with menu planning, you’ve come to the right spot: I’ve got 6 dinners, 1 breakfast, 2 desserts, and a healthier option, all picked by people who know what’s yummy!
Last week was Doodle’s first week at camp. This summer we’re doing camps at two places: some at his karate school, which we are quite familiar with, and the rest at Exploration Place, which is a science and discovery center here in town. It was a toss up between that and the YMCA, but we ended up choosing Exploration Place, since we decided there would be some actual learning and “hands-on” activities there.
So, when Doodle came home on Tuesday, he informed me that camp was great except for one part: they had to do two hours of learning at the beginning of the day. ? I guess to a nine-year old boy, summer vacation does not equate to anything remotely involving bookwork. But score one for mom and dad!
Anyway, I’m all about those lasagna rolls this week. Okay, and the strawberry cheesecake bars, too (everyone knows I have a sweet tooth!).
