Lemon Raspberry Bars
I’m finally getting back into the swing of things after a much needed vacation.
Actually, that’s not true.
While it is fabulous to be back home, I can’t deny the fact that I really, really enjoyed having someone else make (and turn down) my bed, cook all of my meals, and that I rolled over in bed every morning to a glorious view of the ocean. We pretty much ate our way through the Caribbean (and by “we” I mean me), and I haven’t stopped harrassing my husband about booking another cruise since the moment we stepped on the ship.

Also really nice? The fact that our neighbors picked up our mail and watered all of our plants while we were gone. Seriously, my potted plants and shrubs look better now than when they are left to my {very} black thumb. So to say thank you, I made these {very easy} lemon raspberry bars.
Really. Super, super easy.
Only four ingredients.
And feel free to change up the flavors of the cake mix and the jam! I think chocolate cake mix and strawberry jam would be super yummy. Or lemon cake mix and blueberry jam. The possibilities are endless. And, since it’s so easy, you might as well give all of them a try. =)
- 1 18.25-ounce package lemon cake mix
- 2½ cups uncooked quick-cooking oats
- ¾ cup butter, melted
- 1 12-ounce jar raspberry jam
- Preheat oven to 375.
- Combine cake mix and oats. Stir in melted butter until mixture is crumbly. Press approximately 3 cups of the mixture into a greased 13x9 pan.
- Spread jam over the crumb mixture. Sprinkle with remaining mixture. Pat gently to level.
- Bake for 25 minutes, or until lightly browned. Cool completely on a wire rack.

Those look great!!! I love all the different flavor options that you could do with this!!! Sounds like you had a blast on the cruise…we are headed out on one next week. I can’t wait to be pampered and eat like crazy:-)

Whoa, so easy! 4 ingredients?! Are you becoming the new Cake Mix Queen?!? Haha, seriously though, these look great. I love oats, especially in fruit-based bars since they remind me of cobbler (yum). And I’ve never been on a cruise but want to go SO BAD. Especially to the Caribbean? Awesome! I think the ocean would almost be my afterthought and my first instinct would be to race to the unlimited food and drink buffets and go crazy. Is that bad? Then I don’t want to be good. Lol, and I love that your neighbors made your plants look better than you do. I laugh because I just had to water my neighbor’s plants while he was gone and he’s TOOTALLY an intense gardening dude and I had this distinct fear he’d come home and all the plants would be decomposing and stuff… I was more worried about killing his hydrangeas than his dog. So I’d imagine if the roles were reversed, I’d probably come home to a sparkling clean house with happy dogs and like, a lush garden outside. Definitely worth of one of these yummy bars 🙂

I just made these today for a cookie exchange and my comment is, “Yes, they really are that easy and they taste so good!” I used strawberry preserves and the flavor is just lovely. I like the idea of using different jams/preserves with different cake mixes ie chocoloate cake with strawberry jam or vanilla cake with blackberry jam or blueberry jam! So great.
