Nutella Filled Oatmeal Cookie Pies

I owe the Tall Boy a big apology.

Like, a really, super-duper huge I’m sorry.

See, last weekend, we went out-of-town to visit some really good friends.  Friends that used to live right next door to us, and when they moved away, I cried for days.  Pouted longer for that.  Then added unlimited text messaging to my phone so that I could bug them incessantly keep them up-to-date on all of our important news.

Needless to say, there was a little bit of….um, “celebrating” and reminiscing on Friday night.  And when the Tall Boy woke up Saturday morning, he was sick.  Really sick.

For the entire day Saturday, I was totally ticked.  Because the Tall Boy spent the entire day sleeping, completely ruining all of our fun plans.  Why didn’t he listen to me when I suggested it might be a good idea to trade in the beer for water?

Except Sunday he was still sick.

And Monday.

Tuesday, too.

And…in to Wednesday.

Plus Thursday.

Turns out it was the stomach flu, and not the Budweiser-itis I’d accused him of.  Oops.

By Monday night, Doodle had it also.  He was worse Wednesday, so I stayed home from work, sanitizing the entire house, and cursing the Tall Boy for spreading his germs around taking care of my two sick boys.

Also, I decided to make cookies to cheer everyone up.

The only problem was, everyone was too sick to eat them but me.

Nutella Filled Oatmeal Cookie Pies

Ingredients
For the cookies:
  • 1 stick unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 large egg
  • 1½ teaspoons pure vanilla
  • 1¼ cups all purpose flour
  • ½ cup rolled oats
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup peanut butter chips
For the filling:
  • 1 stick unsalted butter, softened
  • 2 cups powdered sugar
  • ½ teaspoon vanilla
  • 1 teaspoon heavy cream
  • ¼ cup Nutella
Method
For the cookies:
  1. Cream your butter and sugars into a stand or electric mixer until well combined. Add eggs and vanilla mixing until well combined.
  2. In a large bowl, mix flour, oats, baking soda and salt until combined. Slowly add to wet ingredients along with chocolate and peanut butter chips.
  3. Scoop dough onto prepared baking sheet about 1 inch apart. Press cookies down to about ½ inch before baking.
  4. Bake for 10-12 minutes at 350, until edges start to turn golden brown. Let cool on baking sheet for 10 minutes before transferring to cooling rack. Let cool completely.
For the filling:
  1. Beat softened butter with an electric mixer until smooth. Slowly add powdered sugar, beating after each addition. Add vanilla, heavy cream, and Nutella, and mix until smooth and creamy.
  2. Frost half of your cookies with frosting on the flat/bottom side. Dip edges in your favorite sprinkles and top with another cookie to create the sandwich.

    I’m sorry sickness is running rampant in your house! Blah, I am the sickness in my house as of last week and it’s awful. I could definitely use some cookies as a cheering up, methinks 🙂

      They were pretty good, Amy, though oatmeal is probably my favorite kind of cookie. And with Nutella? YUM!
