I’m an eggnog fanatic.  Once the holiday season hits and I spot it in the dairy case, eggnog is pretty much all I can think about.  Seriously, I could go through a gallon of the stuff every week completely on my own.  But then my jeans wouldn’t button, and I’d have a completely new set of problems.

So, the last few years, I’ve been making a dairy-free, lightened-up version…one that’s become my all-time favorite seasonal drink {no joke}.  It uses light vanilla soy milk {you may also use almond milk}, dry pudding mix, pumpkin puree, and lots of seasonal spices:

I’ve already made it twice so far this season, with no chance of stopping anytime soon.

Doodle has been obsessed with smoothie-making lately, and my old blender hasn’t really been keeping up – trying to blend even one frozen banana in it is just an effort in futility.  So when I saw that Hamilton Beach had a new smoothie-maker out, I knew I had to get my hands on one.

The Smoothie Smart™ Blender prepares a perfect smoothie with the press of a button: Auto Smoothie. This 45-second smart blending cycle is programmed with the precise pulses and speeds needed to get the right consistency.  So in my case, no removing the blender lid, stirring, cursing, and repeating.

At the end of the cycle, the blender shuts off automatically.  Cool, right??

Not only that, but it has a special “pour-spout” that makes serving a breeze – and mess free.  If you’ve ever lived with a 6-year old who wants to pour his own drink – well, you know how important this is. 😉

And while my favorite faux-nog is super yummy all on it’s own, it’s even better used in a healthy smoothie: combined with frozen bananas and a bit of ground flax seed.  The flax seed is optional, but you really can’t taste it, and it is a great way to get some Omega-3 and extra fiber into your diet.

Pumpkin Nog Smoothie

Serves: serves 2
Ingredients
  • 1 cup lightened up pumpkin nog or store-bought eggnog
  • 1 banana, sliced and frozen
  • 1½ teaspoons ground flax seed
  • 10 ice cubes
  • sprinkles, optional
Method
  1. Place all ingredients except for the sprinkles into your blender. Pulse until ice cubes are crushed and bananas are creamy.
  2. Pour into glasses and top with sprinkles, if desired. Enjoy!

    I’m not a huge fan of eggnog.. It’s actually the only drink I’ve gotten sick off of.
    Do u think a pumpkin purée would work or something similar?

      I am excited to try your eggnog smoothie, since I am allergic to dairy, and cannot have the prepared, or nogs friends make! I have a blueberry, almond milk, protein& spinach smoothie for breakfast most mornings.

    I like a Frozen Monkey in the morning. Frozen banana, cooled espresso, almond milk, raw cacao powder, Medjool dates, and ground flax seeds. The SmootheSmart would make things so much easier!

    I enjoy any berry smoothie with spinach honey and cinnamon but one in particular that’s yummy includes matcha green tea powder, pineapple, bananas, coconut milk and agave!!
