Raspberry Creme de Menthe Parfaits
Holy cow, how did we get back to Monday so fast?
As much as I love Daylight Savings time, I do not love giving up an hour of sleep. Actually, I don’t really sleep that well anyway, so it’s more like I’m giving up an extra hour of day time. I mean, do you know how much I can accomplish in an hour when I set my mind to it? The problem is that lately I’ve been spending my extra time playing around on Pinterest and looking at pictures of Ryan Gosling.
Hee, have you seen the pictures Confessions of a Cookbook Queen has been posting of “Ryan Gosling, Food Blogger’s Husband?” I laugh so hard each time I see one, then make ask the Tall Boy to look, thinking he might get the hint and start stumbling or pinning my posts. You know, for husbandly support. Except he doesn’t know what Pinterest or StumbleUpon are. And he doesn’t even have a Facebook account.
But, he does clean the kitchen after I completely destroy it making dinner (and breakfast, and lunch, and all of the bloggy foods that he doesn’t even eat because they are “too sweet”). And he doesn’t complain when I won’t let him eat anything until after I’ve taken a million photographs and then serve him lukewarm food.
So, I guess I really have “Tall Boy, Food Blogger’s Husband,” and I’m pretty darn happy with that.
Anyway, since it’s nearly St. Patrick’s Day, I determined that I really needed to have a bottle of crème de menthe. Which would have been really awesome to have when I made mint brownie grasshopper pie in a jar, but better late than never, I suppose.
- ½ cup creme de menthe liqueur
- ½ pint fresh raspberries
- 4 scoops vanilla bean ice cream
- Reddi-Whip
- mini-chocolate chips, if desired
- Add a splash of liqueur in the bottom of your glass or bowl. Top with a scoop (or two!) of ice cream, and another splash of liqueur.
- Top with Reddi-Whip and mini-chocolate chips.

I’m not normally a huge mint fan, but I’d definitely try this…yum!
I have to admit, I’m partial to anything mint, but you could just leave it out and replace it with extra-dark chocolate syrup–or chocolate liqueur. =)
Hahahaha, my family now has a complex after living with a food blogger for over a year. They know not to touch anything on the “baking shelf” and they know to ask permission before eating any creations–half completed or otherwise–because they know there’s a finishing touch, photographing/staging process before they can FINALLY get their paws on something. How sad. But on a happier note, LOOK at those raspberries! They are easily the best looking berries I’ve seen for awhile and I LOOOVE raspberries. So juicy and vibrant. Gimme gimme!

I know what you mean. My husband introduced me to Facebook, but he is never on it. He doesn’t have any concept of how Twitter or Pinterest work, although he loves my Flickr account! Last Christmas, I lovingly suggested he check my “Stuff I Want” board on Pinterest, and he replied that he didn’t know how to do that. The thing is, he is an IT administrator, so I gently mocked him, and told him I had faith that he could figure it out!

My kinda dessert – nice and boozy. Creme de Menthe brings me back to the good old days of drinking what was in the parents’ cabinet! 🙂
