Kind of obsessing over EVERYTHING on this plate. The cheesy, meaty, hearty scramble, the raspberries(!!)… it looks phenom. I love these casseroles for Christmas morning; just make ahead and forget about it. And this one with the feta and sausage.. yes please! I always, always make a make-ahead casserole for Christmas morning. Who wants to be messing around in the kitchen instead of lounging by the tree and drinking hot cocoa? Hope you have a great Thanksgiving, Hayley!
If I want to make this the night before and then reheat it in the morning before my guests come – how do you suggest that I do so? Appreciate the help! (Hosting a get together on Friday!)
Hi Sarah–hope I’m not too late in responding. What I usually do with this dish is prepare it the night before and leave it unbaked. Take it out of the fridge while your oven preheats, and then bake it right before your guests arrive. That way, you have all of the prep work done the night before, and the dish is hot out of the oven when your friends/family show up. 🙂
Hi there, looks delicious, but just wondering, what is half and half? Is it some sort of cream? Is there a substitute for it, as I’ve never seen it here (South Africa). Also, is the sausage cut up, or are you actually using mince?
Hi K — half and half is a mixture of cream and milk. If you so not have it where you are, you may substitute milk (whole is best, but any will work). I used ground sausage in this recipe. I hope that helps!

Hi! Wonder if i can just use fresh spinach. If so, do i need to boil it before adding?
