Last weekend, Doodle and I were out of town for a karate tournament. You guys. You GUYS. Registration started at 8:30 am, and when we finished our three events at 2:30, they weren’t even close to being finished. ? And these people are serious, too. One of the instructors broke two boards with his head and a dozen with his elbow. People were swinging kamas everywhere and yelling ki-yai’s and jab-cross-hooking left and right. It was insanity.
Anyway, the concession stand there sold nothing but cold Papa John’s pizza, which Doodle was fine with eating but I was not. So I was STARVING when we hit the road and just wanted to get going on the 50 minute drive back home. Of course, the minute we got in the car, Doodle informed me that he was also “starving” and couldn’t wait until we got home to eat, and what he really needed was “a bowl of ice cream.”
If there was ever any question, this is my kid, ya’ll.
The only problem was that I wasn’t familiar with the city, and I really didn’t want to spend any extra time driving around looking for a fast-food place that sold ice cream by the bowl. I did, however, know that there was a McDonald’s right on the way out of town.
Now, I’m NOT a fan of McDonald’s any other time of the year, but when Shamrock Shakes are on the menu – it’s a different story. Doodle agreed to sub a bowl of ice cream for a Shamrock Shake, and we were on our way. It was when I passed that shake into the backseat that I realized he had never tried one before. #momfail
Since I’m still sticking to my healthy-eating plan there was no sharing of the Shamrock shake for me. I mean – have you checked the calorie count on one of those bad boys? ? Soooo…I decided to make a {slightly} lower calorie substitute to curb my craving. Now, if you’re one of those people who does not like Cool Whip, you can click away right now. This pie uses it. ?
- 1 pre-made chocolate cookie crust (or make your own)
- ⅓ cup chocolate syrup (I used Hershey's lite)
- 1 8-ounce container Cool Whip, thawed (I used light)
- ½ gallon light mint chocolate chip ice cream, softened
- sprinkles and/or mini chocolate chips for garnish, optional
- Pour ⅓ cup chocolate syrup into cookie crust and spread evenly with spatula. Place crust into freezer for 10 to 15 minutes while you prepare the filling.
- Combine Cool Whip and ice cream in a large bowl. Pour filling into the pie crust and smooth with spatula.
- Garnish with sprinkles or chips if desired. Place pie back into freezer for at least 4 hours, or overnight.
