Sheet Pan Shrimp Fajitas – Easy Meal Plan Sunday {Week 6}

Well, here we are finally into the swing of summer, even though that’s not what the calendar actually says.  It’s Memorial Day weekend, school is OUT, and the pool is open.  What’s on your calendar for the week?  If you need help with menu planning, you’ve come to the right spot: I’ve got 6 dinners, 1 breakfast, 2 desserts, and a healthier option, all picked by people who know what’s yummy!

So, last week was sort of an…odd week around my house.  The Tall Boy went on a guys trip to the Indy 500, which meant that Doodle and I had the house to ourselves.  The first night my husband was gone, Doodle got an invite to go with his neighbor friend to a baseball game, and they left right after I got home from work.  Since I didn’t feel like cooking for just myself and I wasn’t that hungry anyway, I had a bowl of cereal for dinner – something I probably hadn’t done since my college days.  I chuckled a little, thinking that was a little silly for a food blogger, but also thinking it was super nice to not to have to do any actual work in the kitchen.  Plus – NO DISHES.
