So Easy Sopapillas

Anyone else but me go wild for sopapillas?

 These easy sopapillas need only three ingredients and 15 minutes in the oven. Perfect for Cinco de Mayo! #recipes #cincodemayo

To be honest, I haven’t had a real one in years. I usually eat tortilla chips and salsa for dessert when we go out for Mexican food.

As a kid, my favorite Mexican restaurant was a little hole in the wall place that was as authentic as you could get.  It’s a family owned restaurant named Connie’s, and they just celebrated their 50th anniversary.  Clearly, they know how to do Mexican food right!  Since we’d just made our own easy sopapillas at home, we decided to order fried ice cream.

Well, I decided to order fried ice cream, with Doodle declaring it “gross” and asking to go to Braum’s instead.  He changed his mind when he saw this:

Even with three of us eating, we couldn’t finish this monstrosity!

But back to the sopapillas.  These are a super easy version, one that you can quickly throw together for a Cinco de Mayo celebration, and something the kiddos can help with.

These take only three ingredients {four with the honey}, and about 12 minutes in the oven.  Done and done.

So Easy Sopapillas

Ingredients
  • 1 sheet of Pepperidge Farm® Puff Pastry, thawed
  • ¾ cup sugar
  • 1 tablespoon ground cinnamon
  • honey, for drizzling
Method
  1. Preheat your oven to 400°F.
  2. After thawing your pastry sheet, unfold it on a lightly floured surface. Cut the pastry sheet into 25 (2-inch) squares.
  3. Bake for 12 to 15 minutes on a silpat lined baking sheet until the pastries are golden brown.
  4. Meanwhile, combine cinnamon and sugar in a large bowl. Add your hot pastries in batches to the bowl and coat with the sugar mixture.
  5. Drizzle the pastries with the honey before serving.

    I am equally obsessed with sopapillas! We have a hole-in-the-wall Mexican place near our old house and that is where my love for sopapillas began. SO amazing. I remember we’d order at least three orders of it every time we’d go, haha. These look SO delish! I am dying over their ease. And that fried ice cream. .. oh maaah gosh.

    Ashley….question. I’m helping give a cinco de mayo party this weekend. Can I make these in the morning and they still be good in the afternoon? (like 6 hours later) or do they have to be eaten quickly out of the oven?

      Hi Melanie! Well, I ate quite a few of these as leftovers, and I still thought they tasted pretty darn good. 🙂 Of course, they are best right out the oven, but I know when party planning that is not always possible! I might try placing them back in your oven on WARM, right before serving, but you’d watch to watch them closely to make sure they don’t get too brown. Good luck, and let me know how they turn out!

    No offense but sopapillas shouldn’t be a flaky pastry. They are almost like a hollow donut…soft and steamy and amazing.

    I’m sure this recipe will work in an emergency but they will never be the same as a real sopapilla…sorry

      I agree with you, Peggy. These are not ‘real’ sopapillas; as I mentioned in my post, this is a kid-friendly version. I often like my 5-year old to help in the kitchen, but I don’t want him around hot oil. :-). I appreciate your feedback, thanks!

      Hi Pat – a Silpat is a silicone non-stick baking sheet. It’s great for working with sticky materials like gooey batter, caramel, doughs, etc. – nothing sticks to it!

    Great recipe! I just made these and loved it. Just a tip, it taste more like a soapapllias if you get it out right at 11 or 12 min., if you wait the pastry will flake. Also I coated mine with melted butter then just a little bit of the sugar mixture and honey. My husband ate his with whip creamand cchocolate drizzle. Thank you for sharing this recipe honey! It was delicious and easy!!

    This aren’t mexican sopapillas :/, this are just pastry baked with honey. Real sopapillas have sugar and cinnamon, are fried (i know, i like light versions, but this is not one 🙁 ) and look like a empanada, oh, and are darker (like light brown).

      Believe me, I’ve eaten plenty of authentic Mexican sopapillas in my day. :-). These are just a fun make at home version that my little boy enjoys helping with–we don’t deep fry at home. But thanks for commenting!

    Fried Ice Cream

    Vanilla Ice Cream
    Cinnamon Toast Crunch Cereal
    Sugar
    Cinammon
    Honey

    Make balls(your desired size) of vanilla ice cream,
    place in freezer untill firm again.
    Crush Cereal and add your desired sugar & cinnamon mix together.
    roll balls of ice cream into cereal.
    placr in a bowl drizzle honey on top & enjoy.
