Spicy Mustard Chicken Skewers

Grilling in the summer is my favorite. And clearly, chicken skewers top the list.
I now have three versions of chicken skewers on my site, and each one is just as good as the last. Plus, you can easily load ’em up with veggies, or serve ’em with a side of brown rice, and you have a super healthy meal in no time. {And yes, I realize I have white rice pictured here, simply because my husband requested it – and since he usually does the grilling, we made a compromise.}
July is National Grilling Month, and to celebrate, Pompeian, a leader in olive oils and vinegars, is sharing simple tips and recipes to help you get a taste of the Mediterranean without leaving your backyard, such as swapping butter or vegetable oil for Pompeian Grapeseed Oil or OlivExtra Premium Mediterranean blend and combining Pompeian oils and vinegars in place of bottled dressings and marinades.
Marinating your chicken before throwing it on the grill makes all the difference in the world. It takes a little bit of pre-planning, but it’s definitely worth it. And your marinades don’t have to be time-intensive or complicated. In my book, the easier, the better!
The marinade for these skewers uses only two ingredients. And I bet you dollars to donuts you already have them both in your kitchen:
white wine vinegar and spicy brown mustard
That’s it!
You’ll also want to mix up a quick and easy basting sauce. Want to know how easy?
You’ll need: more spicy brown mustard, Pompeian OlivExtra Premium Mediterranean Blend Olive Oil, and garlic powder.
See? Easy-peasy.
Brush this on liberally during grilling to keep your skewers moist and flavorful. What makes these especially easy for me is that my husband does all of the hard work by manning the grill, while I get to relax on the patio watching Doodle splash and play in the yard. Yep, grilling is definitely a family favorite for us in the summertime!

What does your family enjoy the most about grilling during the summertime?
- 1 tablespoon Pompeian White Wine Vinegar
- 2 tablespoons Pompeian OlivExtra Premium Mediterranean Blend
- 1 pound boneless chicken breast, cut into 1-inch cubes
- 5 tablespoons spicy brown mustard
- ¼ teaspoons each: salt and pepper
- ¼ teaspoon garlic powder
- 1 medium red onion, cut into chunks
- To make your marinade, whisk together 1 tablespoon white wine vinegar and 2 tablespoons spicy brown mustard. Season your chicken pieces with salt and pepper, and place them into a large ziploc bag along with the marinade. Seal, and shake to combine. Refrigerate for at least one hour.
- Meanwhile, make your basting sauce: combine the remaining 3 tablespoons mustard, 2 tablespoons olive oil and ¼ teaspoon garlic powder. Whisk to combine. Cover and refrigerate while the grill is preheating.
- Alternately thread chicken and onion onto skewers. If you're using wooden skewers, allow your skewers to soak in water for at least 30 minutes first to keep them from burning.
- Grill chicken over medium-high heat for about 8 to 10 minutes, turning and basting often, until cooked through and juices run clear.
