What’s In Your Kitchen Wednesday

Hi everyone!  I’m keeping this short and sweet today…for anyone following me on Instagram, you know that Doodle recently started karate lessons.  While we are having so much fun watching our little guy, it is a little more of a time-investment than we originally anticipated.  I’m still figuring out our new weeknight schedule, so bear with me as I take some time to get into the (new) swing of things.

Let’s get right on to the features!

This week’s most viewed post was this Easy Rotel Casserole from The Plaid and Paisley Kitchen.  The timing on this couldn’t be better–with our new/hectic after-work schedule, I’m always looking for fast and yummy weeknight meals.  Even better, it’s Mexican (my favorite)!

Even though Valentine’s Day is over, I’m totally digging this Strawberry Milk from Chocolate, Chocolate and More. My kiddo drinks strawberry milk by the gallon, so I know he’d get a kick out of this jazzed up version. What kid (or adult) can turn down whipped cream and sprinkles??

I know I’m not alone on my love of all things buffalo chicken.  Check out these Buffalo Chicken Balls with Blue Cheese from Real Housemoms.  I have a feeling my husband might start dropping hints for me to make these for his next game-watching night.  🙂

Speaking of the Tall Boy and game-watching food, I think these Southwestern Egg Rolls from See Aimee Cook might also be on our menu soon.  I’ve never attempted homemade egg rolls and this looks like a great recipe for me to start with (read: easy! + Mexican flavors).

I have to admit, given a choice between brownies and cake, I will almost always choose brownies–especially ones like these Salted Caramel Heath Bar Stuffed Brownies from Confessions of a Baking Queen. OMG.
