30-Minute Stovetop Lasagna

I think the Tall Boy fell in love with me all over again when I made this 30-Minute Stovetop Lasagna.

Aside from chicken pie, the Tall Boy’s very favorite meal is lasagna. But preparing a traditional version just doesn’t work in our typical work-night timetable.  We have approximately 30 minutes between work and the beginning of karate class, and about 45 minutes between the end of karate class and bedtime.  I need quick and easy dinners, folks.

Needless to say, the Tall Boy has been denied lasagna for dinner for quite some time…until now.

No.  It’s not a traditional version.

But all of the flavors are here – without all of the fuss, work and time.

Believe me, the Tall Boy didn’t mind one bit that I made this on the stovetop rather than in the oven, or that it wasn’t a “pretty” square served up on his plate {I’ll admit, this didn’t hold up well scooping out of the pan – but it was a sacrifice we were willing to make. 🙂 ).

In fact, his exact words were, “This is awesome.  Now I can have lasagna more often.”

30-Minute Stovetop Lasagna

Ingredients
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1½ pound ground beef
  • ¾ teaspoon each salt and pepper
  • 2 tablespoons Italian seasoning
  • 12 ounce package lasagna noodles, broken in pieces
  • 28 ounce can tomatoes, undrained and chopped
  • 15 ounce can tomato sauce
  • 3 tablespoons chopped fresh basil
  • 15 ounce container ricotta cheese
  • 2 cups shredded Italian cheese blend
Method
  1. Heat oil in a large Dutch oven over medium-high heat. Add garlic, beef, and spices. Cook, stirring occasionally, until beef is no longer pink - about 8 to 10 minutes.; top with Italian cheese.
  2. Place lasagna noodles over meat mixture; top with tomatoes, tomato sauce, basil and ½ cup water. Bring to a boil; cover, reduce heat and simmer, stirring occasionally, 20 minutes or until noodles are tender.
  3. Dollop ricotta cheese evenly over mixture, stirring slightly. Cover and let stand 2 minutes or until cheese is melted.

    Would like to ask if the lasagna noodles is pre-cooked or is it really raw when you put it in? Please answer back cause I would really really love to do this… (Sons favorite) 🙂

      Hi Ailene–the noodles are uncooked. They cook just perfectly in the pot with the other ingredients. 🙂

    This looks great! Quick meals are a must for my house! One question though…the cheese is added after you brown the meat in the above steps but the picture looks like it was added last. which do you do?

      Thanks for catching that, Lisa. I did actually add my cheese last, but it would work totally fine either way. I just liked the look of the melted cheese on top. 🙂

    You could also try this with Malfalda noodles instead of broken lasagna. They aren’t as thick so it may not take as long to cook.

      I was thinking the same thing, and I’m sure it would be fine, just check them to see when they’re done, and it should be fine.

    How does not burn for you? Me and my S.O. tried making this tonight, and while the cheesy noodle goop was delicious, the bottom meat layer turned into one black angry crust 🙁

        It says to stir it after adding ricotta on top. the meat and italian cheese are at the bottom. It has been boiling and then cooking for 20 minutes.

Bring to a boil; cover, reduce heat and simmer, stirring occasionally, 20 minutes or until noodles are tender. Is you do that, it won’t burn the meat.

    Tried this tonight, tasted good and was easy, but the meat burned. Didanyone else have this problem?

    Quick question. No mention of mozzarella in instructions. Do you cook the Ricotta, with the filling, or put Ricotta and Mozzarella on top after it has cooked? My inclination would be to cook Ricotta with filling, but not sure about this recipe.

      I don’t like Ricotta or cottage cheese, so the recipe I’ve always used calls for Mozzarella and cheddar. Sometimes I will use an Italian Blend instead of Mozzarella, or in addition to it. Substitutions can always be done in any recipe. Just use what you like, or what your wife likes, instead. I will probably use the Italian Blend and cheddar when I make this, instead of Ricotta.

    I made this tonight… Didn’t come out good. The meat burnt on the bottom before the noodles cooked all the way. I suggest it be stirred while cooking

    I made this tonight and my husband (who is CRAZY picky and only likes lasagna if it has TONS of meat) LOVED it…as did my parents! I just used a pound more of beef, and as long as I continued stirring and watching it, it was fine! I was wondering how yours turned out so beautiful. After I mixed it all together it looked kinda…wierd. Like when you mix salsa and sour cream…but a good cover with the cheeses on top would be perfect!! Anyways….the family LOVED it!! 😀 Thanks so much!

      I was wondering the same thing. I guess I’ll either use very lean meat, or drain it if it looks like it needs drained. I wish she’d answered your question.
