Despite taking all of Wilton’s cake decorating classes, my frosting piping skills still leave a lot to be desired.  Cake decorating…I’m not so good at.  Cake eating…well, at that, I’m a pro.;-)

Recently, I got the opportunity to get my cake-happy hands on Amanda’s (of I am Baker and the originator of the rose cake) new book, Surprise Inside Cakes.  Based on the cover alone, I knew Amanda’s book would not disappoint – and it certainly didn’t.

Each cake is not only beautiful on the outside, but also contains a “surprise” when you slice into them.  From rainbow cakes to ombre cakes to a candle shape baked inside a Jack O’Lantern cake, Amanda expertly shows you step-by-step how to recreate these gorgeous cakes at home.  She even makes it look easy!

As much as I wanted to start with a more complex cake, I decided to start with a cake I can handle, and work my way up…I’m hoping by Doodle’s birthday in July I can give something like this a try:

But for today’s post, I’m sharing this Vintage Cake…primarily because I knew I could handle swirling the cream cheese frosting on the top.  Oh, and also because the decadent layers inside really appealed to my taste buds.

The surprise inside this particular cake?  Sitting below two layers of the fluffiest, most-fabulous white cake I’ve ever tasted, was a layer of decadent brownies…which were layered with a slathering of chocolate sauce.

I’m not lying when I tell you eating a slice of this cake had me drooling as much as watching Adam Levine perform shirtless. 😉

Plus, it was super-duper easy to make!  I used Amanda’s white cake recipe – which I highly recommend: it was without a doubt, the best white cake I’ve ever eaten.  I also used her recipe for Decadent Brownies, and yes, they were truly decadent and perfect.  The coolest part about using Amanda’s white cake recipe is that she specifically designed the cakes to bake level, stable, and sturdy – making them much easier to frost.  For a novice cake decorator like me, this was a must. 😉

However, I love that Amanda also notes that you can substitute your favorite box mixes for both the cake and the brownies.  You can still have an amazing surprise inside cake, without quite as much work.  If you’re a beginning baker, this is a great way to get started with some of her amazing creations and wow your friends and family.

Ingredients
  • Amanda's white cake recipe OR 1 box white cake mix
  • Amanda's Decadent Brownies OR 1 box brownie mix
  • 2 squares (2 ounces) semisweet chocolate, finely chopped
  • 7 ounces sweetened condensed milk (half of a 14-ounce can)
Cream Cheese Frosting:
  • 1 8-ounce package cream cheese, room temperature
  • ½ cup unsalted butter, room temperature
  • 1 teaspoon vanilla extract
  • 4 cups confectioner's sugar
  • ¼ cup milk
Method
  1. Prepare white cake as directed on the box, and pour into two 9-inch round cake pans. Allow cakes to cool to room temperature.
  2. Prepare brownies as directed, baking in a 9-inch round cake pan.
  3. To make the chocolate sauce, place the chocolate, sweetened condensed milk and 1 tablespoon water in a small saucepan and cook over low heat, stirring until the chocolate is melted (about 5 minutes).
  4. While the brownies are still warm, place the brownie layer on a cake stand. Slowly pour the chocolate sauce on top, letting it soak into the brownie. Allow the sauce to soak in for at least 30 minutes. Meanwhile, make the cream cheese frosting (see below).
  5. Place a white cake layer on top of the brownies and top with approximately ¼ cup of the frosting using an offset spatula.
  6. Add the second white cake layer and cover the cake in a layer of cream cheese frosting. Since I'm not a pro at decorating, I used Amanda's tip and just swooped my spatula through the frosting in a "C" shape.
  7. Chill the cake until ready to serve.
To make the frosting:
  1. Combine the cream cheese, butter and vanilla in a stand mixer and mix on medium speed until incorporated, about 1 or 2 minutes. Add the confectioner's sugar 1 cup at a time, until the frosting is light and creamy. For thicker/stiffer frosting, add more confectioner's sugar ¼ cup at a time. If the frosting is too stiff, add milk 1 tablespoon at a time.

      The cake was meh, my husband says it tastes like cornbread. We both didn’t like the cream cheese frosting. The brownie part was good, but it did not soak up any of the sauce, so now my fridge is covered in the chocolate sauce that leaked out =/ This really wasn’t worth the hassle. We might try making the brownies again, though, but without the sauce.

        I agree. The brownie layer did not absorb the chocolate sauce. i have not put the other layers on yet , but really worried about the chocolate.

          I WOULD POKE HOLES IN THE BROWNIE LAYER WITH A LARGE FORK, THEN POUR THE CHOCOLATE SAUCE ON A LITTLE AT THE TIME….WHATEVER DOESN ABSORB, DISCARD. i ALMOST THINK IT WOULD BE BETTER TO MAKE A LAYER OF CHOCOLATE CAKE VS THE BROWNIES FOR THE BOTTOM LAYER.

    Your cake is beautiful and looks gorgeous, too. I love vintage (wrote a vintage fiction novel). I love baking and tea parties and this cake would be lovely. I love the way your swirled the cream cheese frosting. I like it much better than the fancy Wilton tips. I might add sugared flowers. Have you ever done those. They’re easy, edible and look like crystallized flowers.

    I make a Butter Yellow Cake, split the layers, the 1rst and 3rd filled with a cheesecake “fluff”. The center Layer is filled with a wonderful Lemon Curd, smooth and tartly-sweet. Top with last 2 layers, cheese cake in the center remember, and finish off with a scrumptious Buttercream Frosting laced with Pure Almond Extract and Lemon rind, finely grated and chopped. Fabulous Holiday Cake!!! …and Easter’s coming, Ladies!!

    That’s a really hard one, I love a good cheesecake (homemade of course!) but for a typical cake cake I think I’d have to say a chocolate buttercream cake with a whipped cream frosting. Mmmmm!

    Where is the recipe for the homemade white cake you were speaking of? I prefer homemade to box mixes. I would love to have a good recipe for white cakes as most recipes tend to come out dry…and I have tried many in my 55 years of baking!

    My favorite cake is a toss up between the German Chocolate cake my Mom and Dad use to make with vanilla icing,my Aunt’s spice cake she used to make for family gatherings, or the white Wedding cake used to be served at Weddings, and the white cake cream filled cup cakes we use to buy from the Barton’s Bakery at the New Eastern Farmer’s Market and their chocolate-white dough marble cakes .are my favorites.

    I can’t say that I actual have a favorite. Anything sweet is wonderful. If I HAD to come up with a favorite, it would probably be chocolate with raspberry curd filling and milk chocolate Swiss Meringue Buttercream. Although champagne cake/orange curd/and champagne buttercream is a very close second.

    That cake looks delicious. I’d say my favorite has always been German chocolate, but the strawberry cake I made for my daughter’s birthday last year was so good, it may have taken first place.

    I LOVE chocolate fudge cake, or the starlight cake from Betty Crocker’s cook book. That’s why I am excited about this recipe. Cream cheese frosting is the best!!

    Ok you start out with saying the white cake recipe is the best white cake you’ve ever had and then you say use a box mix???? I wanted to use the white cake recipe, do I have to buy the cookbook to get that recipe to use to make this cake?

    Cake looks delicious so I am going to be making it for a friends wedding and I am going to use the decadent brownie recipe. I have a question though, this cake is 9″ and the brownie recipe calls for a 8″ round pan, do I just adjust the time?

    Hi Ashley I totally agree with you on special cake decorations but I want to take a class specifically for that because I plan to master that…but this cake looks so good and yes I am going to make it for sure…..The mere thought of the chocolate sauce has me curious esp when it includes condense milk…..cant wait to make it and post the end results…thanks a bunch for posting …

    This cake turned out perfectly! It was such a hit! I used the white cake recipe and then used a box brownie mix. I put a layer of Nutella on top of the brownie instead of the chocolate sauce. I’ll definitely be making this cake again for birthdays to come! Thanks for the recipe!!

    I made this cake This weekend for my sister’s birthday. I used a box mix for the first brownie layer. I couldn’t get it put of the pan in one piece, so I ended up using the link to the home made brownies. I also used the link for the white cake. This is very good, but very rich. This is definitely a special occasion cake.

    This cake was great, but you should add to the instructions, to line ALL of the cake and brownie pans with parchment paper. The brownies were especially hard to get out of the pan in one piece, especially since you can’t let them cool. I just hope I was able to salvage it. I know the bottom layer of cake will come apart when I cut it.

      Jen, thanks for that tip. Can you share your impression of the cake after making. I wish Ashley had responded to some of the comments here from people who actually made the cake. I am concerned about people saying the chocolate never soaked in. Also, one person said there is a discrepancy in 8 vs 9 in cake pans. It looks fabulous, but the few people who gave feedback here did not seem too positive. Although it was tough to sift through all the comments unrelated to this cake or who never made it.
